Located in the mountains of Santa Barabara, south of Medellin, you will find the Echavarria Family farm. Situated approximately 5400-6400m above sea level, they experience an ideal climate for slow and constant development of their coffee crop, with warm days and cold nights. You'll taste the wonderfully sweet, smooth, and bright profiles of the Chiroso varietal in this coffee. 

Commonly grown in Urrao, a municipality in southwest Antioquia, Colombia, Chiroso is believed to be a natural mutation of Caturra, but with longer-shaped cherries. Because of this, many local producers referred to the variety as Caturra Chiroso.

Pedro Miguel Echavarría manages Pergamino Coffee, a roaster and exporter in Medellín, Colombia – which also grows its own coffee. The Echavarria Family farm where this coffee comes from is a part of the Pergamino Coffee group, “Chiroso is a slang word in rural Colombia for something that’s slightly elongated,” he says. “It’s not a very common word, but because of the variety’s elongated beans, producers gave it that name.”

 

We roast on Tuesdays and Wednesdays and to ensure the best tasting coffees, orders received after Monday may not be processed or shipped until the following week.
